Fruity Panna Cotta

Let’s make some beautiful Panna Cotta with fruits today! The recipe I include here is lighter, but it’s healthier and great for summer time🙂

👩‍🏫General guidance:

  • milk: cream 1:2. Milk can be cow milk, coconut milk, almond milk. Cream is heavy whipping cream, can also substitute some with yogurt or sour cream.
  • liquid : gelatin 3cups : 3.5 silver gelatin sheets or 1 bag of gelatin powder.
  • I like to use gelatin sheets, it’s much simpler to melt.

🍮Panna Cotta Base:

  • 1 cup milk, ~2 tbsp sugar, bring it to boil, then turn off stove.
  • Put 3.5 gelatin sheets in cold water till soft (less than 5 minutes). And stir them into the milk (hot but not boil).
  • Add 2 cups of whipping cream, mix well.
  • Pour the liquid to cups: if you want to make an angled shape like I show in the pictures, use a shallower baking cup or muffin pans to keep your cup tilted.
  • put in fridge for~2 hours.

That’s the Panna Cotta base. Then you can be creative for the toppings. Here are a few ideas:

  • Fresh fruits
  • Fruit jams: it’s more tasty with fresh made fruit jams. You can use strawberries, blue berries, or cherries, for example, add some sugar and boil till thick (~15 minutes).
  • Make another fruit jelly layer: I tried two flavors, mango and grapefruit, this time.

Note that if you want to add a fruit jelly layer, you can do it after refrige the Panna Cotta base for about an hour, not 2 hours.

🥭Recipe to make the mango jelly:

  • 3 mangos, make ~1.5 cups mango puree.
  • 2 gelatin sheets softed in cold water.
  • half cup mango juice or water, microwave for 40 seconds, and stir in the gelatin sheets to dissolve.
  • Add the gelatin liquid to the mango puree, mix well.
  • Pour the mixture on top of the Panna Cotta base. Shape it to the design you like.
  • Refrige for another 2 hours

🍊Recipe to make the grapefruit jelly:

  • ~2 grapefruits, peel and get the flesh. Yeah, that takes some work.
  • slightly mesh it. This should roughly give you 1.5 cups juice with pulps. Add 1tbsp sugar
  • 2 gelatin sheets softed in cold water.
  • half cup grapefruit juice or water, microwave for 40 seconds, and stir in the gelatin sheets to dissolve.
  • Add the gelatin liquid to the grapefruit puree, mix well.
  • Pour the mixture on top of the Panna Cotta base. Shape it to the design you like.
  • Refrige for another 2 hours

Bread rolls – å„式面包

世界上最伟大的发明是什么?爱因斯坦秒答是:“面包!”。嗯,他一定很喜欢面包吧🤭

这次多做几种花样和口味,做了椰蓉,香芋,奶油,还有枣泥。

做点心有点像玩泥巴,可以捏成各种花样。就是做出来的形状不完全可控,不过倒也有趣,像这次就是蝴蝶长的有点过胖了,奶油包变成了一个个小猪猪脸😅

面包的关键是面要发的好。我偷个懒,就写发面把,“捏泥巴”的部分大家自由发挥:

Bread recipe:

  • 🥣4 cups flour, 3tsp instant yeast, 4tbsb sugar, mix well.
  • 🥛add 1/2 tsb salt, 2 eggs, 40g room temperature softed butter, ~200ml warm milk
  • knead well
  • cover and rest for ~5 minutes, knead again.
  • ⌛let it rise to ~2 times big, about 40 minutes.

When it’s ready, I usually take 1/3 of the dough to make cream cheese rolls, one of my kids favorites, and the rest to make various of flavors and style, for fun 🙂

🥖It’s super easy to make cream cheese bread rolls:

  • Use a rolling pin to shape the dough to a rectangle shape
  • 🧀Mix 100g softed cream cheese, 20g butter, 1.5tsb sugar.
  • Spread the cream cheese evenly on the dough
  • Add some raisens or cranberries (optional)
  • Roll from one side to make a roll. Cut to N pieces.

⌛Let the bread roll rise again, about 20 minutes.

Preheat oven to 350°f.

Brush with egg.

Bake for ~20 minutes.

Beef steak pot – ç‰›æŽ’é”…

My kid’s favorite recently. All in one pot with beef, vegetables and sauce. And they say everything is their favorite🥰

Simple recipe:

  • 🥩 pat dry, add salt on both sides. Leave it there for half an hour.
  • 🥗prepare the vegetables: flexible with what you have. I used onions, mushrooms, peppers, potatos, carrots, tomatoes. Cut to big chunks.
  • 🍳pan-fry: I prefer to use a cast iron pot as you need high temperature to pan fry the steak. Add a little bit oil, keep temperature high, fry the steak (4 sides) to light brown.
  • ⌛take out, let it cool down for a few minutes.
  • 🍳pan-fry again: adjust time based on how you like it to be cooked.
  • ⌛take out, let it cool down.
  • 🥘meanwhile, fry the vegetables. Take 1/3 out to blender, add cream,water, and blend well. Put the sauce back, let it boil and season with salt and a bit sugar.
  • 🥓cut the steak to slices and add them on top of the vegetables.
  • 🥂 enjoy!

娃最近评选出来的最爱– 牛排锅。说牛排,蔬菜,sauce都是他们的最爱🥰

做法很简单:

  • 牛排室温,擦干,撒盐 (也可以加胡椒,我一般不加,容易糊),大概腌半小时。
  • 准备蔬菜:选自己喜欢的冰箱里正好有的几样蔬菜,比如洋葱,蘑菇,土豆,青椒,红椒,胡萝卜,西红柿等。
  • 煎牛排:锅很重要,找一口铸铁锅或者厚底的不锈钢锅。少量油烧热,保持高温,四面煎至微微焦黄。乘出来静置几分钟。然后再煎一次,这里可以根据自己对生熟的喜好,调整煎的时间。
  • 做蔬菜锅底:蔬菜炒熟,分出1/3左右,加cream和水打个汁,再倒回来,煮开,调味。
  • 第二次煎过的牛排静置5分钟左右,切小块,然后摆在蔬菜浓汤上就好了。

豆沙酥和枣泥酥

Homemade red bean puffs and date puffs. Yummy 😋 The recipe is in Chinese. I will find time to translate to English later.

前两天我发了个凤梨酥的简单做法,有同学说还是太难了,没有现成的凤梨馅。。。那如果你正好有枣泥馅或者红豆馅,就试试这个吧,没有的话也可以自己做,复杂度跟凤梨馅类似哈。

制作酥皮,这个量可以做~40个😄:

  • 300g 面粉(2.4cups)
  • 1条黄油 (~113g),软化
  • 2tbsb 糖粉 (喜欢甜的可以多加点)
  • 2个鸡蛋
    不用打发,前面三个先拌活均匀,再加入鸡蛋拌活,面团应该是软硬适中,放冰箱冷藏一个小时。

一个小时后回来,把面团分成两份,搓成长条,然后用擀面杖按压成手掌宽。

把豆沙馅或者枣泥馅也搓成长条,放在面皮中间,然后包起来。

翻过来,轻轻滚圆,然后切成大约3cm的小块。刷蛋黄液,撒芝麻。

烤箱bake档预热365F (大约哈,看自家烤箱),烤25分钟。

红茶和酥皮点心是绝配,享用吧😍

Easy Mango Mouse Cake

My little boy helped to clean the house today 😍, and as a deal, I am making him this mango mouse cake.

This is an easy no-bake recipe, and only take ~30 minutes to make. It’s light and fruity, very nice for summer time 👍

🍥Cake Base:

  • 120g crackers (I used the one below), crushed
  • 50g butter, melted
  • mix these two well, put in a ~7 inch cake mold, press flat.
  • let it cool in the fridge for about half an hour.

🍰Mango Mouse:

  • 4 mangos, peel and cut to cubes
  • put 3/4 of the mangos, 90 ml milk, 2 tbsb sugar in a blender and blend well. This will get you ~ 400ml mango smoothie.
  • 5 gelatin sheets, soak in water for 5 minutes, then use 30ml warm water (< 80°C ) to melt the gelatin sheets, and add it to the mango juice.
  • ~250 ml heavy cream, 2tbsp sugar, beat to very soft peaks (don’t over beat). Add it to the mango smoothie and mix well.

🎨Assemble:

  • take out the cake base from fridge.
  • pour 1/3 of the mango mouse, add some mango cubes
  • pour another 1/3 of the mango mouse, add some mango cubes
  • pour the rest of mango mouse on top
  • refrige for at least 2 hours

Sichuan Boiled Beef (水煮牛肉)

I love 水煮牛肉. However, the authentic version we eat at restaurants is too spicy for me, even after I asked for little spicy or mild 😅.

So here is the recipe I adapted to make tasty 水煮牛肉 at home that is really little spicy or no spicy at all.

🎨Ingredients:

  • 🥩beef: ~0.5lb, buy pre-sliced or cut to thin slices yourself (lion top, ribeye, new york, etc. all good)
  • 🥗vegetables: very flexible, you can use cabbage, bean sprouts, potatoes, or what ever you like. This time I used cucumbers and common beans (芸豆)as I happen to have them.
  • 🧄garlic, ginger, shallot cut to slices.
  • 🌶️chili crush, minced garlic, sichuan pepper (花椒, optional), adjust based on how spicy you like.

🧑‍🍳Recipe

  • 🥣Rinse beef with cold water a few times to remove blood.
  • Marinate beef slices with a little bit (1/6 tsb) baking soda, 1tsp soy sauce, 1/4 tsp white pepper, 1/2 tsb corn starch
  • 🧄In a fry wok, add oil, garlic, ginger, shallot, and a few sichuan pepper (optional), cook for 1~2 minutes. Take the pepper out, and add 1tsp bean paste (豆瓣酱或者豆豉酱),cook for another minute or so.
  • Add ~2tbsp soy sauce, half cup of water, boil for 1minute, then add ~4cups of water.
  • 🥗After the water boil, add the vegetables, cook for a few minutes. 🧂Season with sugar, salt and sesame oil.
  • 🍲Take the vegetables out, put them into the bowl to serve. Also take ~half of the soup out to the serving bowl.
  • 🥩Add 1tsp oil to the beef to separate the pieces. Boil the beef slices, about 2 minutes. Take the beef out to the serving bowl, with a few tbsp of the soup.
  • 🌶️Put the chili crush, minced garlic, sichuan pepper (optional) on top of the beef. Fry 2tbsp of oil to very hot, and pour on the chili, garlic.
  • 🥂Enjoy!

Tomato Beef Pot( ç•ªèŒ„牛肉锅)

This is my go-to scoops of comfort. It’s very delicious and easy to make.

Ingredients:
Tomatoes (4), beef steak ~1lb, mushrooms, celery (opt) , garlic, ginger, shallot

Recipe:

  • 🍅Wash the mushrooms, cut tamatoes, celery (opt)
  • 🧄Cut garlic, ginger, shallot.
  • 🥩Cut the steak to thin slices. I used ribeyes, other types will work too. Rinse with cold water a few times to remove blood.
  • 🥣Put beef in a bowl, add 1/4 tsb baking soda, 1tbsp soy sauce, 1/4 tsp white pepper, 1/2 tsb corn starch, mix well
  • 🍅add oil to a pot, fry the tomatoes to fully cooked, and put it in a bowl to use later.
  • 🧄Fry garlic, ginger, shallot, add a bit of the mushrooms, fry for ~1min
  • 🍲Add a cup of water, let it boil, then add the cooked tomatoes, add ~3cups of water. Let it boil.
  • 🥩Add 1 tbsp oil to the beef, to avoid sticking together. Put the beef slices to the boiling soup, piece by piece. It should only take ~2mins to cook, during this time, add the following:
  • 🥗Add the rest of the mushrooms, and celery (if you use).
  • 🧂Add salt, sugar, 1tbsp rice wine (or whatever you have, or skip), 1tbsp sesame oil.
  • 🥂Enjoy!

A small tip:

If you like to rinse out the blood in the meat more completely, you can use a bit starch to rub the meat and then rinse well.

Egg tart and Pies

Freshly baked egg tart, smells so good and tastes so good 😘

Bonus, the same dough can be used to make many other cookies, such as Apple Pie, Banana Pie, Sweetheart cake (I like this translation. In Chinese this is called 老婆饼),etc.

🍪Making the dough:

  • 1.5 cups all purpose flour
  • 3tbsp butter, softed
  • 100ml water + 1tsp sugar + 1/3 tsp salt
    Mix and knead well.

With a rolling pin, roll into a rectangle shape, spread ~1.5tbsb softed butter evenly on top. Fold vertically for 3 layers, then fold horizontally for 3 layers (see pictures). Wrap in food wrapper, let it chill in the fridge for half an hour.

🏃‍♀️During this time, you can get some exercise and then come back 😉

🍪Take the dough out, gently press it to make it 2x of the size, then roll to a rectangle shape again. This time the shape is more narrow. spread ~1.5tbsb softed butter evenly on top. Fold horizontally for 3 layers (see pictures). Wrap in food wrapper, let it chill in the fridge for half an hour.

💃Go and relax for half an hour 🙂

🍪Take the dough out again. Similar as last step, gently roll it to a rectangle shape. This time wider and thiner.

Now you have two choices: use the dough all for egg tart (making ~18 tarts) or half egg tart half cookies. I chose the later. Cut the dough vertically to 2 piece. Half of it spread butter, and then roll it to a cylinder; the other half also spread with butter, and then fold horizontally for 4 layers. Wrap in food wrapper, let it chill in the fridge for an hour.

🧑‍🍳During this time, don’t go and relax, we need to prepare the filling:

🍥For the Sweetheart cake:

  • ~half cup well cooked red beans, slightly pressed.
  • 2tbsp sugar
  • 1tbsp butter
  • 2tbsp flour
    Mix well and let it chill in the fridge.

🥚For the egg tart:

  • 4 egg yolks
  • 1/4 cup sugar (this amount makes a not very sweet taste, you can add more or less based on your preference)
  • 3tbsp startch
    Mix well.

In a sauce pot, boil 1cup heavy cream, 2/3 cup milk, 1 tsp vanilla extract. Watch the side of the pot, when you see bubbles starting to come out, turn off the heat. Don’t let it boil!

Pour the hot cream into the egg mix, mix well. Transfer the egg mix to a larger measure cup or some other container that is easy to pour the mix to egg tart mold later, using a sieve to remove the lumbs. Let it chill in the fridge.

🍌Prepare the banana filling at the last because of color change:

  • simply cup a banana to small pieces, and 1tsp sugar.

⌛Baking Time!

Preheat oven to 375f, roast setting (both up and bottom heat).

🥚For the egg tart:

  • Cut the dough to 9 pieces (for 2.6 inch egg tart molds, adapt according based on your mold size)
  • Put each piece in a mold. Use your fingers to gentally press and shape it to fit in the mold.
  • Pour the egg mix to each egg tart mold, fill about 85%
  • Bake for 25 minutes (may need to adjust based on your oven)

🍥🍌For the pies:

  • Roll the dough to rectangle shape again.
  • Cut out ~12 circle shapes
  • Make 6 sweetheart pie and 6 banana pie.
  • Brush with egg yolk, spread some sesame seeds.
  • Bake for 15 minutes (may need to adjust based on your oven)

😍 Time to enjoy!

If you can’t finish, the next day you can simply heat oven to 350f, and back for ~4 minutes.

Braised Beef Noodle Soup (红烧牛肉面)

山珍海味,都不如一碗红烧牛肉面让人满足😋

显摆一下,今天这碗牛肉面,连对菜很挑剔的某个同学(就不点名批评了😾)都说“哟,你这碗面有水平”。我个人也觉得是很久以来我吃过最好吃的面了。

在家里做牛肉面呢,是很考验耐心的一道功夫菜,倒不是费力,就是熬汤要很久。但我保证,你如果试过一次,肯定觉得值🙂

食材:
牛大骨(熬汤),牛腱(beef shank),beef stew meat (可省), 牛排(ribeye 或者类似,可省,但有的话很有特点,后面会说),酸菜或者泡菜,青菜,葱,姜,蒜,香菜。

话说现在要凑齐这些食材也不容易,大家灵活掌握。

流程:
🍲熬汤:牛骨头用水汆一下,洗净,加一大锅水,姜,葱,几粒花椒,大火煮开,小火煮4个小时左右。你如果有时间煮更久点也没问题。

🧑‍💻趁着熬汤的时候,我去干了点正事。两个半小时回来,接着做。

🥘红烧牛肉:

  • 牛腱切大块,beef stew也切大块,泡水15分钟去血水。
  • 锅里放一点油,把牛肉煎一下,倒入高压锅里
  • 红烧汁:锅里放一点油,把葱姜炒香,加入糖( ~4tbsp) 炒化,加入酱油 (~4tbsp),然后加水烧开,倒入高压锅里。- – 可以吃辣的同学可以在炒葱姜的时候加入几个辣椒,我没有加,因为娃不能吃辣。
  • 调料包:我没有现成的,而且特殊时期,家里调料也不全,所以只放了八角(2),香叶(2)和桂皮(1),实践证明也OK。
  • 高压锅meat/stew档,35分钟。喜欢肉有嚼劲的可以适当缩短时间。

⏳肉红烧着的时候,我们来做些其它准备工作。

  • 炒酸菜:酸菜可是牛肉面的好伴侣,增味,解腻。可惜,特殊时期,家里没有酸菜,怎么办呢🤔?我在冰箱里找到一盒韩国泡菜,冲泡掉泡菜的辣味,切碎,加蒜末,一点酱油,糖炒了一下,居然也可以👍
  • 牛排肉:切薄片,冲去血水,加一点酱油上色。放一边,等下拿牛肉汤烫一下就可以。
  • 葱和香菜切粒,备用
  • 青菜汆烫一下,备用。

⌛牛骨头汤熬好了。哇,一开盖子,香叶扑鼻。红烧牛肉也好了,捞出来放一边。

🍜现在开始准备乘面:

  • 锅里烧上水,准备煮面
  • 另外找一个锅,加入4汤勺牛骨汤, 4汤勺红烧牛肉汤, 烧开,把牛排肉快速烫熟。
  • 准备装牛肉面的大碗,3汤勺牛骨汤 + 4 or 5汤勺红烧牛肉汤。
  • 加入煮好的面,放青菜,葱末,香菜末,摆上红烧的牛肉和烫熟的牛排肉,加一勺炒酸菜和辣椒油(可省)。就好了!

注:烫牛肉嫌麻烦可以省略,而且一般店里是不这么做的。我自己觉得是一个亮点,可以体会不同风味和口感的牛肉,还有很重要一点是我们家娃很喜欢这种牛肉。

注2:喜欢吃辣的同学,做红烧牛肉汁还有炒酸菜的时候都可以加入辣椒炒香,吃面的时候加入辣椒酱也不错。我的做法里尽量省去了辣椒,因为要照顾到娃的口味。话说娃每次去面店最纠结的就是牛肉面,想吃又太辣吃不了🤭

Salmon Gravlax

This recipe takes 2~3 days to cure the salmon, but it’s quite simple to make. If you like cured salmon, it’s worth giving it a try.

⏳Day 1

  • 1 lemon, half a grapefruit (opt), squize out the juice and put aside
  • sugar: salt 2:1, I used 1/2 cup sugar, 1/4cup salt, a bit lemon zest, a bit grapefruit zest, 1/2 tsp grounded black pepper, half of the juice from the first step, mix well
  • salmon pat dry
  • put the remaining half portion of the juice on a plate first, then place the salmon, rub the mixture in step 2 on the salmon.
  • if you like, you can also cut the lemon and grapefruit skin to small pieces and spread on top (opt)
  • wrap it with food wrap, put something heavy on top, and let it chill in the fridge for 1~2 days

⏳Day 2 or 3

  • take the salmon out, remove the marinade, wash slightly and pat dry.
  • brush honey mustard on top
  • chop dill and spread on top
  • let it chill in the fridge for one more day

⌛ Day 3 or 4


Ready to enjoy 😋

  • slice the salmon to thin slices. Wow, what a beautiful color😍
  • you can enjoy it alone, with a cup of wine, make hand sushi roll, put it on bagels, … Your choice 👍
